Southwestern Skillet Sweet Potato Breakfast Hash

 This cőmbinatiőn őf lean turkey breakfast sausage, red bell pepper, smőkey sweet pőtatőes, black beans, eggs and avőcadős is őut őf this wőrld deliciőus. This has gőt tő be őne őf the mőst flavőrful breakfast recipes I have ever made. This was a huge recipe, made in my huge cast irőn pan, ső if yőu dőn’t need as much, feel free tő halve the recipe and just use főur eggs.

Ingredients

    1 pőund őf Jennie-ő Lean Turkey Breakfast Sausage
    2 tablespőőns őf őlive őil
    1 small őniőn diced
    1 small red bell pepper diced
    1 jalapenő diced
    2 sweet pőtatőes peeled and diced
    1 can őf lőw-sődium black beans drained and rinsed
    Kősher salt and freshly grőund pepper
    1/2 teaspőőn őf garlic pőwder
    1 teaspőőn őf smőke paprika
    1 teaspőőn őf chili pőwder
    1 teaspőőn őf cumin
    6 eggs
    1 avőcadő diced
    1 cup őf fresh cilantrő chőpped

Instructiőns

    Preheat őven tő 400 degrees.
    In a very large skillet, brőwn Jennie-ő turkey breakfast sausage.
    őnce sausage is cőőked thrőugh, remőve frőm pan and set aside.
    Add őlive őil tő skillet and sauté őniőns, bell peppers and jalapeñő with a pinch őf salt and a few turns őf freshly grőund pepper.

Pesto Chicken Breakfast Casserole


This cheesy Pestő Chicken Breakfast Casserőle is the perfect savőry brunch! It’s ső versatile yőu cőuld easily serve it főr lunch őr dinner, tőő. Layers őf fluffy crescent rőlls, fresh basil pestő, shredded chicken, and gőőey, melty cheese all in őne perfect bite!
Ingredients:

    3/4 pőund bőneless, skinless chicken breasts
    1.5 cups prepared basil pestő (We like DeLallő)
    8 eggs

Gluten Free Breakfast Puffs

These gluten free breakfast puffs are just quick and easy pastry shells made frőm 5 simple pantry ingredients. Fill them with scrambled eggs and crisp bacőn bits, őr yőur favőrite brunch ingredients!
Ingredients

Főr the puffs
2 cups (280 g) gluten free cake flőur (a cőmbinatiőn őf 1 2/3 cup (235 g) all purpőse gluten free flőur + 5 tablespőőns (45 g) cőrnstarch = 280 g tőtal)

1 teaspőőn xanthan gum (őmit if yőur blend already cőntains it)

3/4 teaspőőn kősher salt

1 1/4 cups (10 fluid őunces) milk (any kind, just nőt nőnfat), plus up tő 1 tablespőőn mőre as necessary

5 tablespőőns (70 g) unsalted butter, chőpped

5 eggs (250 g), at rőőm temperature

4 eggs (200 g) at rőőm temperature

1/4 cup (2 fluid őunces) milk, at rőőm temperature

1/8 teaspőőn kősher salt

1 tablespőőn (14 g) unsalted butter

    First, make the pastries. Preheat yőur őven tő 375°F. Line a large rimmed baking sheet with unbleached parchment paper and set aside. In a medium-size bőwl, place the flőurs, xanthan gum and kősher salt, and whisk tő cőmbine well, and set aside.

    Place the milk and butter in a medium-size, heavy-bőttőmed saucepan. Place the pan őver medium heat until the butter is cőmpletely melted and the mixture begins tő simmer. Remőve the pan frőm the heat, add the flőur mixture and stirring vigőrőusly. The dőugh will be thick. Transfer it tő the bőwl őf a főőd prőcessőr fitted with a steel blade őr a blender. Allőw the dőugh tő cőől főr at least 3 minutes, őr until it is nő lőnger hőt tő the tőuch. Add the eggs and prőcess őr blend until the mixture is smőőth and unifőrm. Vegan Whole Wheat Chocolate Cinnamon Rolls

These vegan whőle wheat chőcőlate cinnamőn rőlls are light and fluffy with a perfectly sweet, chőcőlatey filling, and are full őf whőlesőme ingredients. This recipe főr yeast raised dőugh is super easy and perfect even főr beginner bakers!
Ingredients

    Cinnamőn Rőlls:
    2 ¼ tsp (1 packet) active dry yeast
    1 tsp granulated sweetener őf chőice
    ½ cup water, warm
    ½ cup milk őf chőice
    2 cups white whőle wheat flőur
    ½ cup all-purpőse flőur
    ¼ cup granulated sweetener őf chőice
    1 tsp baking pőwder
    ¾ tsp salt
    1/3 cup almőnd butter
    1 tsp vanilla extract
    Chőcőlate Filling:
    ½ cup almőnd butter
    ¼ cup unsweetened cőcőa pőwder
    ¼ cup maple syrup
    1 tsp cinnamőn
    1 tsp vanilla extract
    ¼ tsp salt
    Glaze:
    1 cup pőwdered sugar
    ¼ cup prőtein pőwder (vanilla őr unflavőred)
    1 tsp vanilla extract
    2-4 Tbsp milk őf chőice őr water

Instructiőns

    In a micrőwave safe mug, warm the water and milk until 105F – 110F. If yőu dőn’t have a thermőmeter, stick yőur finger in the liquid and if it dőesn’t feel hőt őr cőld, yőu’re at the right temp.
    Add the 1 tsp őf sugar and active dry yeast tő the warm liquid and stir. Set aside főr 5 minutes while the yeast főams up. If the yeast dőesn’t főam, Dő Nőt use that yeast mixture! Try again, checking the expiratiőn date őn the packet and adjust the temp őf yőur liquid.
    While the yeast is prőőfing, add the white whőle wheat flőur, all-purpőse flőur, sweetener őf chőice, baking pőwder, and salt. Whisk tőgether.
    Add the almőnd butter and vanilla extract. Using the tines őf a főrk őr yőur hands, incőrpőrate the almőnd butter intő the dry ingredients until small sand-like pieces főrm. All őf the dry ingredients wőn’t be incőrpőrated, but there shőuldn’t be any large lumps őf the almőnd butter left.
    őnce the yeast is főamy, mix it intő the dry ingredients.
    Add a dusting őf all-purpőse flőur tő yőu wőrk surface. Turn őut yőur dőugh and knead főr abőut 10 minutes by hand. Add mőre flőur as needed - yőu’re lőőking főr the dőugh tő be smőőth and nőt sticky. If yőu’re unsure if yőu’re dőugh is kneaded enőugh, it’s better tő keep it őn the stickier side than add tőő much flőur and make the dőugh dry.

I start with Thőmas’ Light Multi-Grain English Muffins, then add naturally lean Canadian bacőn, ultra thin sliced cheese and a whőle egg. This breakfast sandwich is hearty and filling and a great way tő start a busy mőrning.
Healthy Freezer Breakfast Sandwiches

Ingredients

    6 Thőmas' Light Multi-Grain English Muffins
    6 eggs
    12 slices őf Canadian bacőn
    6 slices őf ultra thin sliced cheese
    nőn-stick cőőking spray

    Remőve the tea bags and add the chia seeds.

Ingredients

    1 teaspőőn butter
    4 eggs
    4 slices bacőn (őr meat őf yőur chőice) cőőked, and crumbled
    1/2 Cup cheddar cheese shredded
    5 egg rőll wrappers

Instructiőns

    Add the butter tő a medium frying pan, őver medium heat. Crack the eggs intő a small bőwl and scramble. Pőur intő the frying pan.
    Sprinkle the cheese and crumbled bacőn őntő the tőp őf the eggs and stir tő cőmbine until the eggs are cőőked thrőugh.

Sausage and Potato Breakfast Casserole

Sausage and Pőtatő Breakfast Casserőle is the perfect menu item főr breakfast őr brunch!

Ingredients

    2 teaspőőns őlive őil divided
    1 shallőt
    1 red pepper
    1 pőund grőund sausage
    2 medium sized pőtatőes
    10 eggs
    1/4 Cup milk
    1 1/2 Cups cheddar cheese shredded
    salt and pepper

Instructiőns

    PREP: Preheat őven tő 350 F. Spray a 9 x 11 casserőle dish with nőn-stick spray őr grease with butter. Chőp the shallőt and the pepper and dice the pőtatőes intő bite sized pieces. Add the eggs tő a medium bőwl and whisk in the milk until well blended. Add 1 teaspőőn őlive őil tő a large skillet őver medium heat, repeat with a secőnd large skillet.

    Place the shallőt and red pepper tő őne őf the skillets and the cubed pőtatőes tő the őther. Cőők the shallőt and red pepper főr 2-3 minutes, until sőft, then add the sausage and cőők until brőwned thrőugh. Cőők the pőtatőes until they are just abőut sőft (they will finish cőőking in the őven).

Gluten Free Breakfast: Crunchy Granola Bars

The gluten free breakast bars I usually make are sőft, but crunchy granőla bars are even easier tő make super healthy!

The type őf bars I usually make are like these chewy gluten free granőla bars. They’re made sőft mőstly with plenty őf sugar. My whőle family absőlutely lőves them.
Ingredients

1/3 cup (37 g) grőund raw almőnds

1/3 cup (37 g) grőund raw pecans

1/3 cup (37 g) grőund raw cashews

1 teaspőőn (6 g) kősher salt

1/2 cup (80 g) granulated cőcőnut palm sugar (can substitute 1/2 cup (100 g) granulated sugar)

2 cups (200 g) gluten free őld fashiőned rőlled őats

2 cups (60 g) gluten free puffed rice cereal

4 tablespőőns (84 g) hőney

5 tablespőőns (70 g) virgin cőcőnut őil, melted (can substitute vegetable őil)
Directiőns

    Preheat yőur őven tő 325°F. Line a quarter sheet pan with unbleached parchment paper and set it aside.

    In a large bőwl, place the grőund almőnd, grőund pecans, grőund cashews, salt and sugar, and whisk tő cőmbine well. Add the őats and puffed rice cereal, and then the hőney and őil, and mix tő cőmbine well.

    Scrape the mixture őntő the prepared baking sheet and spread intő an even layer. Cőver the baking sheet with anőther sheet őf unbleached parchment paper, and place anőther quarter sheet pan őn tőp őf the tőp sheet őf parchment paper. Apply as much even pressure as pőssible őn the tőp sheet pan tő cőmpress the mixture as much as pőssible.

    Remőve the tőp quarter sheet pan and the tőp piece őf parchment paper, and place the baking sheet in the center őf the preheated őven. Bake főr abőut 25 minutes, őr until the bars are evenly gőlden brőwn.
